The Setting

This special Cuvée was created in 1971, Thinking it was a shame to blend the grapes issued from old vines (average age 80 years), this Cuvée was born. Having a look in official papers dated back to 1826, the name of DE VALOIS, an ancestor of the JAUME family was found and this spécial Cuvée was named after it. |

Vinification
|
The grapes are hand-picked and sorted during the picking to keep the best ripe grapes (any unripe or diseased grapes are eliminated).They are entirely destemmed and sent to ferment in large concrete tanks. A lot of pumping-over is done to extract the maximum of aromas and tannins. The fermentation lasts about three weeks with carefully controlled temperatures (28° to 30°). When the fermentation cormes to an end, the wine is settled, is clarified, it is filtered and estate bottled after one and a half year. |

Tasting
|
The grapes bear tiny fruit, which give a highly concentrated quality. This Cuvée is very characteristic of the main grape variety : the Grenache which brings the spicy and peppery flavours combined with notes of truffle and cherry. |

Aging
|
This wine can be drunk as from 2 years, but it will be at its best as from 6-8 years. |
