Owned by the Jaume Family since 1826, the Domaine des Chanssaud has got a permanent care for the quality and the respect of traditions. The different soils and grape variety blends give its typicity and character. |

Production
|
The Domaine spreads over 50 ha ; 20 ha of Châteauneuf-du-Pape and 30 ha of Côtes du Rhône totalling 1.500 hl of red, rosé and white, This Cuvée is produced by 25 ha of vine. The yields are about 50 hl/ha. |

Age of the vines
|
Very different : from newly planted vines to mature vines, the vineyard is composed of 10 of vines aged 5-10 years, 60 of vines aged 15-30 years and 30 of vines aged 30-80 years. |

Vinification
|
Traditional. The grapes are entirely destemmed and sent to ferment in large concrete tanks, A lot of pumping-over is done to extract the maximum of aromas and tannins. The fermentation lasts about 10-15 days with carefully controlled temperatures (28° to 30°). Racked a lot of times to remove lees during the winter, this wine is lightly filtered and bottled the following spring. |

Tasting

This typical wine, where terroir and “Provence” sunshine dominate, combines character, roundness and suppleness with good structured tannins and fruity flavours. |
