Vinification
|
The grapes are entirely pressed to prevent oxidation. A small amount of sulphur is added, the juice settles during 24 hours. It is racked and yeast is added; it starts its fermentation with carefully controlled temperatures (16° to 18°).This control allows the extraction of a maximum of aromas and fruit flavours. The alcoholic fermentation will end between the 10th and 15th day and the wine is left to clear and sulphur dioxide is added to prevent the malolactic fermentation. If necessary a refrigeration System is used to remove tartaric crystals. The wine is bottled at the beginning of the following year. |

Tasting

The blend of these two grape varieties give the wine an aromatic richness. The Clairette gives white flower flavours and aromas of pears and peaches. The Grenache adds roundness and fat. |
