The Setting









Owned by the Jaume family since 1826, the Domaine des Chanssaud is located in the very heart of Châteauneuf-du-Pape vineyards.

Covering the ground, the typical rounded pebbles store-up the heat of the sun and restore it to the plants at night, a particularly effective maturing System. The Domaine spreads over 50 ha : 20 ha of Châteauneuf-du-Pape providing around 640 hl of red wine and 80hl of white wine, and 30 ha of Côtes du Rhône totalling 1.500 hl of red, rosé and white.

Vinification












The grapes are hand-picked and sorted during the picking to keep healthy ripe grapes (any unripe or diseased grapes are eliminated).

They are entirely pressed to avoid oxidation. Just a little sulfited, the juice settles during 24 hours. It is racked, yeast is added and it starts its fermentation with carefully controlled temperatures (16° to 18°). This control allows the extraction of a maximum of aromas and fruit flavours. The alcoholic fermentation will end between the 10th and 15th day and the wine is left to clear and sulphur dioxide is added to prevent the malolactic fermentation. If necessary a refrigeration system is used to remove tartaric crystals. The wine will be bottled at the beginning of the following year

   
Tasting


This wine is very aromatic, depending on the vintages, with white flower aromas and citrus or apple flavours. Depending on the maturity of the grapes some exotic fruit flavours can develop.
   
Aging


This wine can be aged 10 years. But it is preferable to drink it young - 2 to 5 years - during this period it will keep its freshness. Over this period its colour will become darker with banana and honey aromas.
   
With food

This wine goes well with your fish, seafood and its also delicious to drink on its own.
